Spun honey, or Whipped honey, is a creamy honey that has a small crystalline honey structure intentionally introduced to it and whipped in, in order to allow the honey to continue it’s natural crystallization over time, but in a micro-crystal. This allows it to remain pliable and soft for an indefinite period of time. Unlike naturally occurring crystallization which will harden the honey into big rock chunks that are hard to manage until warmed to dissolve the large crystals. Our process in no way reduces the health profile of our fine raw honey, but rather enhances the usable shelf life. It is also easier to use and spread because it has the consistency of room temperature creamy peanut butter, and is not runny and drippy like clear honey. It is important to store it at 70ºF or below so that the micro crystals do not dissolve and return it’s properties to those of clear honey.


Our honey is extracted from the hives in small batches with care to preserve the hive, and save the bees. We take our time to keep the honey below 100ºF throughout straining and bottling so that we can deliver to you a premium, truly raw, healthy honey that has not been compromised along the way.

In the foamy layer on top of the honey is the naturally occurring beeswax, pollen and propolis. These healthy aspects of honey are normally removed in large batch commercial processing at temperatures that kill the enzymes and probiotics in the honey. These compounds are not filtered out by our process, which intentionally leaves them in because they are so important for health. You can use the honey with that layer right on the top or stir it in if you prefer.
Our hives are near hay fields in Palmer, Alaska, where no pesticides or artificial fertilizers are used, where the clover and fireweed are abundant. This allows our bees to make our premium honey, sweet and light, and to winter over in healthy hives year after year.
